Ever get bored with the same ‘ol dehydrated mush you take backpacking? Ever get tired of the same ‘ol foil meals common to “car camping”? Me too! So instead, I built a cake! A pineapple upside down cake in a dutch oven to be exact.

Step 1) Find a recipe (it doesn’t need to be specifically for dutch oven cooking) and buy the ingredients

Step 2) Find a 12″ dutch oven and line it with tin foil.

Step 3) Lube it up with 2 Tbsp. of butter

Step 4) Place as many whole slices of pineapple as you can on the bottom of the oven.

Step 5) If the holes are big enough, add 2 cherries instead of one, because extra awesome is always better.

Step 6) Coat the cherries and pineapple slices with brown sugar. My recipe called for 1/2 C. I think I used 3/4. Again, more awesome = better.

Step 7) Pour the raw (hopefully that is obvious) cake mix over the top of evryfing.

Step 8 ) Cover the dutch oven with the lid.

Step 9) Place a small amount of coals on the ground, just barely enough to heat the entire surface of the dutch oven. You should be able to hold your hand over the coals for a 3-4 count.

Step 10) Place enough coals on the top of the lid so that it is somewhat painful to hold your hand there for a 2 count.

Step 11) Check top coals periodically. Once you can hold your hand there without pain for a 3 count, add some more coals to get it back down to the 2 count.

Step 12) Check bottom coals once at the 15 minute mark. They should still be ok or just need a few more. Again, bring them up to the 3-4 count.

Step 13) Check cake after 30 min. NOTE: Do not place the lid on the dirty ground when checking the cake! It may need to go back on if it’s not done.

Step 14) Lift cake out of the dutch oven by the tin foil. Cover and let cool for 10 minutes.

Step 15) Flip cake upside down (hence, “upside down” cake), uncover, and bask in its awesomeness! Oh wait, and then eat it too!

Don’t Miss Your Chance

I was stuck in Corporate America for 9 years. I was miserable.

Then I took control.

You can too, and it starts right here.
